Le Dauphin is considered the "Prince of French Cheese" with the name deriving from the heir apparent to the French Throne.
The texture and creaminess of this outstanding cheese lends itself to a unique process whereby the milk is filtered under pressure to remove much of the excess fluid. The result is a texture closer to butter that is silky. Although this cheese has a higher fat content, it is also richer in nutrients and proteins due to the concentration of the milk.

The first sensation when tasting this cheese is the utter creaminess of it. The cheese melts quickly in the mouth leaving a silky feeling. The sweetness will have everyone coming back for more. It's difficult not to love this one! Giving this cheese a couple more weeks of ripening will show the true majestic nature of this beauty.

The Dauphin of France was the title given to the oldest son of the King from 1350 to 1791 and 1824 to 1830. The word is French for dolphin which is also the animal on the coat of arms. The Dauphin was responsible for the rule of the Dauphiné which was legally part of the Holy Roman Empire. Anarchy ruled for two centuries however as the Dauphin was often a child or had other interests to distract them from their duties.
