The March Therapy Box - A Celebration of Australia

This month’s box is a little journey south into Tasmania at the beginning of autumn, where tradition meets curiosity and new ideas are reshaping what Australian cheese can be.

This month we’re featuring Pepper Berry Brie from Tim Gadischke and the team at Tasmanian Cheesery, made on Paredarerme Country.

For centuries cheesemakers have experimented with herbs and spices. Traders returning to Europe during the Age of Discovery brought pepper and other aromatics that soon found their way into cheeses across the continent.

Tim’s version takes that long tradition somewhere entirely new.

Instead of imported spices, he uses pepperberry gathered from the Tasmanian highlands, a native ingredient with a deep, warming character. Worked through a luscious triple cream brie, it creates a cheese that begins with rich buttery indulgence and finishes with a gentle, lingering warmth.

It’s distinctly Australian and a beautiful example of a cheesemaker willing to experiment and push beyond old-world conventions.

Pair it with a Tasmanian cider like Willie Smith’s or a cool-climate Tasmanian riesling and the whole experience sings.

Dried Pear | On the Side 🍐

Naturally sweet pears gently dried to concentrate their flavour and delicate floral notes. Soft, chewy and beautifully aromatic, they bring a mellow sweetness that pairs effortlessly with creamy soft cheeses, washed rinds and nutty aged styles.

Hazelnut Chocolate | Hunted + Gathered 🍫

Stone-ground chocolate made from ethically sourced cacao and roasted Australian hazelnuts. Rich, dark and deeply satisfying with a gentle crunch, it adds a luxurious finish to a grazing board and is especially good with blue cheeses or after the last savoury bite.

Fig & Szechuan Pepper | Crunch Preserves 🍈

A lush fig preserve lifted with the subtle citrusy tingle of Szechuan pepper. Sweet, fragrant and slightly warming, it adds depth and intrigue alongside both soft and hard cheeses.

Together these additions bring sweetness, richness and a little sparkle to the board, turning a simple cheese plate into a full grazing experience.
